I’m a huge believer in the benefits of plant-based foods, but I’ve also realized too much rigidity can shift us out of balance. I’ve experimented with many diets, including being a raw vegan.

Raw foods have many benefits, but too many restrictions and rules tend to complicate life. I know my body thrives when I eat plant-based foods. It boosts immunity, stabilizes weight, fights diseases, and offers an abundance of energy. It’s not about perfection but finding what works best and being flexible when needed.

Having been married to a man from Mexico for more than 20 years has tremendously influenced my cooking. Learning the diverse, rich, yet simplistic flavors of the food, traditions, and culture was a true blessing.

But I love to cook, so it was a gift to learn how to create and prepare foods everyone loved — with the upside of being good for us. And even though we’re no longer married, plant-based enchiladas, tamales, and gorditas are still favorite go-to’s. My kids grew up eating beans, rice, and salsa in a hundred different ways as soon as they could talk. You’d be amazed by all the delicious possibilities
